All Cook Must Study At This Spot’: Modest Turkish Restaurant Ranks 4th on List of London’s Leading Restaurants.

Whenever curating a ranking of London’s best eateries, one might expect familiar award-winning names. But, situated near the top among these food giants is a simple salonu situated in a outlying area of northern London.

An Unexpected Accolade

This little Turkish restaurant, specialising in the specialties of Mersin, a metropolis on Turkey’s Mediterranean coast, has been named the 4th top restaurant in the metropolis by a respected food magazine. This honour has made the owners utterly astonished.

“I am completely surprised,” states the family member, pointing to his family’s relentless work that culminated in their small shop achieving such a prominent ranking on a prestigious 99-strong list.

The Charm of Simplicity

This small shop, which was a simple cafe before its change into a sought-after spot, has retained much of its former character. It accommodates just over 20 people and, beyond the impressive live cooking display, the interior remains largely unchanged. “It’s a compact and cozy space,” comments the owner.

The Namesake Creation: Tantuni

However, it’s all about the fare, and this restaurant definitely delivers. The restaurant’s signature dish, tantuni, is a uncomplicated pleasure. The meat—either lamb or chicken—is prepared via steaming to preserve a succulent texture.

It is then tossed into a large pan with seasonings and oil, which are incorporated in gradually. Once the meaty mixture heats through, freshly made lavaş—a soft bread—is placed on top to soak in all the aromas. Thinly sliced onions and a sprinkling of parsley are added before the tasty meat is rolled tightly inside.

The wrap is usually enjoyed with a drop of lemon or some pickles. The outcome is a strong punch of taste, with soft hints of sumac, bold onions and red, paprika-infused oil bringing it all together.

Beyond the Basic Tantuni

Another option is yoğurtlu tantuni, where the savoury lavaş is cut up and topped with yogurt, tomato sauce and cooked, nutty browned butter. A respected food critic called this dish “a part of London’s few flawless, impeccable dishes”.

When it comes to a sweet finish, the eatery’s künefe proves a treat. It is coated in less syrup than usual, giving it a deeper, more aromatic and more balanced profile.

Outranking the Stars

Remarkably, this unassuming restaurant has been placed higher than several renowned three-Michelin-starred establishments. It finds itself near the top of the list, following other esteemed dining destinations.

While two people could easily leave this place full for below £25, comparable tasting menus at top-tier establishments can start at significantly more than that price.

A Ethos of Heart

It is also one of several Turkish restaurants featured and is found well outside the city’s central zones. “It is not about luxury. London is an expensive city. It is belief that in an expensive place you’re going to have the finest service and finest food but I don’t believe in that,” states the owner.

“I believe what is paramount is friendliness, kindness and a place you can be yourself and feel calm.”

The view is shared by the list’s editor, who stated that if he were in a role of authority, he would “require to have every chef in London come to this spot as a final lesson, to teach them the pitfalls of overthinking, and to show what is achievable if you do just one – or three – things to their absolute best”.

The Story of Dedication

In contrast to many chefs heading kitchens in the list’s highest ranks, the head chef behind the food didn’t work at elite restaurants. “I am really happy of our restaurant and our mum,” adds her son.

Many restaurants need years to find their footing, but this eatery first opened its doors seven years ago. Its popularity is due to long, grinding, seven-day weeks of dedication.

“Our mum would be very tired. She would buy ingredients in the morning and create the food in the afternoon. Everything is made by hand; she would do all of this. She is a solo parent and she managed a life outside work but her friends would support her to encourage her. She was raising children and a house to manage as well. Each of these duties shaped her into what she is now: a remarkable person,” he says.

An Accomplishment for the People

This restaurant’s recognition is bound to have meaning beyond its own doors. “I believe a lot of people would be happy, as I am, because the Turkish community is a major part of London,” notes the owner, emphasising the wider meaning of this culinary honour.
